Canning

Let me explain that I have not gotten pictures off my camera for at least six months, so I finally decided to put them on the computer, and now there are a lot of random pictures I have taken this year that were fun to look at! Not I get to blog about them too. So, the next few weeks there will be a lot of catch up blogging from our last six months…

This summer we did a lot of canning and freezing of fruits and vegetables. We don’t like to see food go to waste, and although our garden did not produce huge amounts of food, a lot of friends kept offering us boxes and boxes of produce… Here we are working on tomatoes from our friend Edith’s garden…

Thank goodness Chris is also into canning, I could not have managed this all by myself. We made a lot of pear and peach syrup so we didn’t have to throw away any of the peaches and pears that were too soft to can.

There is our peaches and a lot of pears from our friends Verla and Burdell.

We have plum trees and we had TONS of plums this year. Elora helped me pit the plums, and then I made some plum sauce like we used to eat in Vienna, and also lots and lots of fruit leather…

We discovered that our cherry pitter actually works pretty well on our smaller plums. Elora liked helping put the plums in the pitter. We had a lot of plum on the counter and floor after this experiment, but it sure was faster that the whole bucket I pitted using a paring knife…

It feels really good to have a basement and freezer full of food from right here in our town! I actually enjoy canning and love being able to eat food year round from the local gardens. It is nice to know that we did not let food go to waste simply because people grew more than they needed! So here is to the next winter full of bottled fruit, syrup, and vegetables!!!
